Emily travels a lot, so it's very hard to get mail to her. However letters sent to her inevitably reach her, whether it be through standard mailing procedures or some sort of intricate network of friends and so forth.
Either way, letters have to start somewhere, and this is there.

You clearly do not know me very well. If you did, you wouldn't be worrying about formality or proper greetings. Next time, just say hi. I really don't need you to pad my ego with words like majesty or wondrous. I get enough of that from men. And the occasional woman.
Anyway, glad to know I've got support from the traveling fairies. I'll be the first to admit I'm not doing everything right, but policy is policy, and someone has to get screwed over. Why do you think I go out gallivanting all the time?
Seriously though, I'm very approachable. Disregard everything you've ever learned about royalty when it comes to me.

Oh Emily,
You don't know the half of it. When I'm back at the palace, I have nothing to do but read the letters of socially awkward uninvolved fairies.
The palace is a nice size. It would stick out too much if it were as big as Hyrule Castle, so we have to keep it to a couple of floors. It's not bad though, it's not like we need a lot of space. Most of the guests end up staying the night with me anyway not a floozy.
Anyway, you want to see a real marvel, check out the city the gorons have. They did a good job building into the mountain face. Check it out sometime.
